I am trying to make a cookie dupe for a company (holddasugar) that uses vital wheat gluten as the only flour in their cookies. I can't even remotely get the texture to come out properly while using vital wheat gluten. It comes out stretchy / fluffy in the wrong way. I've played around with the amount of liquid, temperature, but am not sure what will help. Any suggestions?

Vital wheat gluten only?? Can't say I've ever heard of that - typically you mix it with flour and if you want to use it a lot, try 1 TSP per cup of flour,👍👍

I like to toast my rye bread; as that gumminess you talked about will dry out even more in the toaster. Also I like caraway seeds in my rye bread. It is the way my grandmother made it. She used a dark German beer in her rye bread. She also made a delicious pumpernickel as well. Sandwiches just taste better on a rye or pumpernickel. And a hamburger patty melt on rye is my favorite burger.

this recipe uses sour dough so that is your yeast - however, if you wanted to use instant yeast or active dry yeast, then replace the 400 gm of active sour dough starter with 200 grams water, 200 grams flour, and 1/4 tsp instant or active dry yeast - keep all the other ingredients the same :)

I recently seen a video by Dr. Eric Berg I believe he said a quality olive oil should have a bit of a spicy kick after you swallow it. You should feel it in the back of your throat. Is this true? Because I have felt this from Partanna but not the yellow horse one. I thought it was a bad quality olive oil because it was thin and smooth… I had no kick in the back of my throat like the Partanna
